Course Description: Course Contents Description: Introduction – Types of frozen dairy desserts – Ingredients used in mix manufacturing – Manufacturing of dairy ice cream and similar types – Freezing – Overrun – Hardening – Packaging – Storage and marketing – Factors affecting the freezing and hardening of frozen desserts – Soft-serve ice cream – Defects in dairy frozen desserts – Scoring card for frozen desserts – Nutritional value of dairy frozen desserts – Different types of cream and methods of manufacturing – Butter manufacturing by various methods – Improving the nutritional value of butter – Yield – Manufacturing of anhydrous milk fat and ghee. Objectives of the course :

The course aims to study the types of frozen desserts and the ingredients used in mix manufacturing; the production of dairy-based frozen desserts and similar types; understanding the processes of freezing, hardening, packaging, storage, marketing, and overrun calculation; learning the methods for producing soft-serve ice cream, defects in dairy-based frozen desserts, the judging scorecard for frozen desserts, and understanding the nutritional value of dairy-based frozen desserts. The course also aims to understand the different types of cream and their manufacturing methods, butter making through various methods, improving the nutritional value of butter, calculating yield, and learning the methods for producing anhydrous milk fat and ghee.

Course outputs :

At the end of studying this course, the student will be able to:
1- Preparation and explanation of the manufacturing of various frozen dairy products, cream, butter, and ghee, along with the steps for preserving these products while maintaining high quality and nutritional value. .
2- Clarifying the procedures for handling and solving problems related to the manufacturing of fat products and frozen dairy products through teamwork and acquiring leadership responsibility.
3- Using computer programs, the internet, and its applications to obtain information related to the manufacturing of fatty and frozen dairy products, and writing reports in a comprehensive and clear manner.
