The course aims to study starter cultures and fermented dairy products, their manufacturing methods, and properties, as well as cheese manufacturing methods and their importance, cheese classification, additives in cheese making, and understanding the specifications of milk used in cheese making. It will cover milk standardization and coagulation, processing of the formed curd, methods for final whey draining, pressing operations, understanding plastic curd, salting methods, cheese ripening, how to evaluate cheese quality, yield calculation, identifying manufacturing methods for some cheese varieties, and cheese production using ultrafiltration and reverse osmosis. It will also cover the production of processed cheese and related products, methods for packaging, wrapping, and preserving cheese, and finally, studying the nutritional value of cheese.
At the end of studying this course, the student will be able to:
1- Application of manufacturing and storage steps for fermented cheeses and dairy products under high hygienic and sanitary conditions, with high quality and high nutritional value.
2. Clarify procedures for handling problems related to cheese and fermented dairy product manufacturing within the work team.
3. Using computer programs, the internet, and its applications to obtain information related to the cheese and fermented dairy products industry and writing specialized reports.
