Course Description: Introduction to the importance of dates and the most prevalent types in the Kingdom, fruit growth and maturity stages - chemical composition, nutritional and medicinal value of dates. Identification of date packaging, processing, and storage methods and technologies. Study of how to manufacture date products, including date paste, molasses, yeast, vinegar, and various date sweets. Identification of how to utilize palm by-products and date processing.

Objectives of the course :

1- Identifying the types of dates in the Kingdom, their chemical composition, nutritional value, and medicinal properties.
2- Summary of principles and methods of date packaging, bottling, and storage technology.
Acquiring the skill to produce a large number of date products, including date paste, molasses, yeast, vinegar, and date candies.
4- Acquiring the skill of how to benefit from date palm waste and manufacture dates.

Course outputs :

1. Identifying the principles and methods of commercial date and date product manufacturing and preservation, including the production of date paste, date molasses, yeast, and vinegar using dates, as well as the utilization of date processing by-products.
2. Acquiring modern problem-solving skills related to the preparation and preservation of dates and their products within a work team.
3. Researching scientific information and writing reports related to the manufacturing and preservation of dates and their products. .
