The course aims to study liquid milk products and various dairy products, including fermented dairy products, dried powders, sweetened and unsweetened concentrates, fatty products, cheeses, milk ices, milk protein products, and whey. It will cover their properties, different traditional and modern manufacturing methods, storage methods, defects resulting from manufacturing or storage and how to avoid or treat them, and how to maintain the quality of these products.
At the end of studying this course, the student will be able to:
1- Application of manufacturing and preservation steps for dairy products under highly hygienic and sanitary conditions, with high quality and high nutritional value.
Clarification of procedures for dealing with problems in the field of dairy product manufacturing within the team.
3. Using computer programs, the internet, and their applications to obtain information related to dairy product technology and write specialized reports.
